Description

This comforting Beef Enchilada Casserole is a deconstructed, time-saving version of traditional enchiladas. By layering seasoned ground beef, hearty black beans, and tender corn tortillas with a zesty red sauce and melted cheese, you achieve all the classic flavors without the tedious rolling process. It is a wholesome, protein-rich meal perfect for busy weeknights that the whole family will adore.

1 pound lean ground beef
1 medium onion, diced
2 cloves garlic, minced
1 can (10 oz) non-alcoholic red enchilada sauce
1 can (14.5 oz) diced tomatoes, drained
1 can (15 oz) black beans, drained and rinsed
12 corn tortillas, cut into strips or halves
2 cups shredded Monterey Jack and cheddar cheese blend
1 tsp ground cumin
1 tsp chili powder
Fresh cilantro for garnish


Instructions

Preheat your oven to 375°F (190°C).
In a large skillet, brown the ground beef with the diced onion over medium-high heat until cooked through.
Drain any excess fat and stir in the minced garlic, cumin, and chili powder for 1 minute until fragrant.
Stir in the drained diced tomatoes, black beans, and the enchilada sauce; simmer for 5 minutes.
Lightly grease a 9×13 inch baking dish.
Spread a thin layer of the beef mixture on the bottom of the dish.
Place a layer of corn tortillas over the sauce, followed by more beef mixture and a sprinkle of cheese.
Repeat the layers until all ingredients are used, finishing with a generous layer of cheese on top.
Cover with foil and bake for 20 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
Let rest for 5-10 minutes before serving with fresh cilantro.


Notes

Ensure your enchilada sauce contains no alcohol or animal-based thickeners. Store leftovers in an airtight container for up to 3 days. You can prep the beef mixture in advance to save time on busy evenings.
