3.5 pounds butternut squash, peeled, seeded, and cubed
2 tablespoons extra virgin olive oil, divided
1 large yellow onion, diced
3 cups fresh kale, chopped
3 cloves garlic, minced

1/2 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 tablespoon fresh sage, chopped

Instructions
