1/2 pound fresh asparagus, ends trimmed and cut into 2-inch pieces
1/4 cup unsalted butter
8 ounces sliced fresh mushrooms
1/2 cup yellow onion, finely diced
1/4 cup all-purpose flour
3 cups low-sodium chicken broth
8 ounces heavy whipping cream
1/2 cup grated Parmesan cheese
3 cups cooked rotisserie chicken, shredded
8 ounces egg noodles, cooked al dente
1 cup fresh baby spinach
Salt and black pepper to taste


Instructions

Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
In a large pot of boiling salted water, blanch the asparagus for 2 minutes, then drain and set aside.
In a large skillet, melt the butter over medium heat and sauté the onions and mushrooms until softened.
stir in the flour and cook for 1 minute to create a roux.
Gradually whisk in the chicken broth and heavy cream, simmering until the sauce thickens.
Remove from heat and fold in the shredded chicken, cooked egg noodles, blanched asparagus, and baby spinach.
Season with salt and pepper to taste.
Transfer the mixture to the prepared baking dish and sprinkle evenly with Parmesan cheese.
Bake for 20 minutes, or until the sauce is bubbling and the top is golden brown.


Notes

Store leftovers in an airtight container for up to 3 days. If the sauce thickens too much upon reheating, add a small splash of broth. Feel free to substitute the egg noodles with penne pasta for a different texture.
