Ingredients
2 cups cooked, shredded chicken breast
2 cups riced cauliflower
1/2 cup cream cheese, softened
1 cup shredded cheddar cheese
2 tablespoons olive oil
1 clove garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried thyme
Salt and black pepper to taste
Optional: 1/4 cup diced green onions or spinach for garnish
Instructions
Preheat oven to 375°F (190°C)
Sauté garlic in olive oil until fragrant
Mix shredded chicken, cream cheese, paprika, thyme, salt, and pepper
Add riced cauliflower and stir until coated
Transfer mixture to a greased baking dish
Sprinkle cheddar cheese evenly over top
Bake for 20-25 minutes until golden and bubbly
Let cool slightly before serving
