Description

4 cups mashed sweet potatoes (approx. 3 large potatoes, cooked and peeled)
1 can (15 oz) black beans, rinsed and drained
1 cup corn kernels
1/2 cup red onion, finely diced
2 chipotle peppers in adobo sauce, minced
2 tbsp fresh lime juice
1 tsp ground cumin
1/2 tsp smoked paprika
1/2 cup shredded Monterey Jack or vegan cheese (optional)
Fresh cilantro for garnish


Instructions

Preheat your oven to 375°F (190°C) and lightly grease a 9×9 inch baking dish.
In a large mixing bowl, combine the mashed sweet potatoes, minced chipotle peppers, lime juice, cumin, and smoked paprika until smooth.
Gently fold in the black beans, corn, and diced red onion.
Spread the mixture evenly into the prepared baking dish.
If using cheese, sprinkle it evenly over the top.
Bake for 25 to 30 minutes until the casserole is heated through and slightly golden on top.
Remove from the oven, let it rest for 5 minutes, garnish with fresh cilantro, and serve warm.


Notes
