16 oz lean ground beef
1 small onion, finely diced
5 garlic cloves, minced
1 tsp kosher salt
1 tsp black pepper
1/8 tsp smoked paprika
2 cups mixed frozen vegetables (peas, carrots, corn)
1.5 cups beef broth (alcohol-free)
2 tbsp tomato paste
2 cups biscuit baking mix
1 cup sharp cheddar cheese, shredded
2/3 cup milk
2 tbsp butter, melted
1/2 tsp dried parsley
1/4 tsp garlic powder


Instructions

Preheat your oven to 400°F (200°C).
In a large skillet, brown the ground beef with diced onion over medium heat until cooked through.
Add minced garlic, salt, pepper, and smoked paprika, sautéing for another minute until fragrant.
Stir in the tomato paste, frozen vegetables, and beef broth, simmering for 5 minutes until slightly thickened.
Transfer the beef mixture to a 9×13 inch baking dish.
In a medium bowl, combine the biscuit mix, shredded cheddar cheese, and milk until a soft dough forms.
Drop spoonfuls of the biscuit dough evenly over the beef mixture.
Bake for 20-25 minutes until the biscuits are golden brown and the filling is bubbling.
Whisk the melted butter with parsley and garlic powder, then brush over the hot biscuits before serving.


Notes
