5 cups chicken breasts, cut into bite-size pieces
1/2 teaspoon kosher salt
1/2 teaspoon fresh black pepper
1 cup red onion, finely diced
2 1/4 cups fresh button mushrooms, sliced
1 cup celery, diced
1 can (10.5 ounces) cream of mushroom soup
3/4 cup heavy cream
2 teaspoons fresh lemon juice
2 cups Gruyere cheese, freshly grated
2 cups white rice, pre-cooked
1 1/2 cups chicken broth
1/2 cup slivered almonds


Instructions

Preheat your oven to 375°F (190°C).
In a large skillet, melt the butter over medium-high heat.
Add the chicken pieces, season with salt and pepper, and cook until browned, then remove from the skillet.
In the same skillet, sauté the onion, mushrooms, and celery until soft and fragrant.
In a large bowl, whisk together the cream of mushroom soup, heavy cream, lemon juice, and chicken broth.
Stir the pre-cooked rice, sautéed vegetables, and browned chicken into the soup mixture.
Pour the mixture into a large baking dish and top evenly with the grated Gruyere cheese and slivered almonds.
Bake for 25-30 minutes until the casserole is bubbling and the cheese is golden and crispy.


Notes
