Ingredients
1 pound ground beef (90% lean)
1 cup mushrooms, finely chopped
1/2 cup onion, finely diced
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 teaspoon dried thyme
2 cups shredded Swiss cheese
1 cup milk
1 tablespoon Dijon mustard
1/2 cup all-purpose flour
1 cup water
1 box tater tots
Instructions
Preheat oven to 375°F (190°C)
Heat a large skillet over medium heat and add ground beef. Brown and drain excess fat.
Add mushrooms, onions, and garlic to the skillet. Sauté for 5-7 minutes until softened.
Stir in salt, pepper, paprika, and thyme. Cook for 1-2 minutes.
In a bowl, mix milk, Dijon mustard, flour, and water until smooth to create a creamy sauce.
Pour the sauce into the skillet with beef and mushroom mixture. Stir well and simmer for 2-3 minutes.
Transfer the beef mixture to a 9×13-inch baking dish.
Sprinkle shredded Swiss cheese evenly over the mixture.
Bake for 20-25 minutes until the cheese is melted and bubbly.
Top with a single layer of tater tots and bake for 15-20 minutes until the tater tots are golden and crispy.
Remove from the oven, let cool slightly, and serve.
Notes
For a dairy-free version, substitute the Swiss cheese with a melty vegan cheese alternative.
You can use frozen tater tots directly from the box as instructions indicate.
