1 1/2 pounds sweet potatoes
3 tablespoons unsalted butter
4 tablespoons whole milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
1 pound lean ground beef
1 medium onion, diced
2 carrots, finely diced
2 stalks celery, finely diced
1 cup beef broth
1 cup shredded sharp white cheddar cheese


Instructions

Preheat your oven to 400°F (200°C).
Peel and cube the sweet potatoes, then boil until tender before draining.
Mash the sweet potatoes with butter, milk, salt, pepper, and nutmeg until smooth.
In a large skillet over medium-high heat, brown the ground beef until no longer pink.
Add the onion, carrots, and celery to the skillet and sauté until softened.
Pour in the beef broth and simmer until the liquid has reduced and thickened.
