Ingredients
1 lb fresh green beans, trimmed and cut into 1-inch pieces

8 oz package baby portobello mushrooms, finely chopped
2 cloves garlic, minced
2 tablespoons all-purpose flour
1 1/2 cups unsweetened, unflavored non-dairy milk (oat or soy works best)
1/2 cup vegetable broth
1 teaspoon soy sauce (or tamari for a gluten-free option)
1 package (6 oz) French crispy fried onions
Instructions
Preheat your oven to 350 degrees Fahrenheit.
Blanch the green beans in boiling water for 3-5 minutes until tender-crisp, then drain and set aside.
In a large skillet, melt the plant-based butter over medium heat.
Add the finely chopped mushrooms and sauté until they release their moisture and begin to brown.
Stir in the minced garlic and cook for another minute until fragrant.
Sprinkle the flour over the mushrooms and stir constantly for 1-2 minutes to cook out the raw flour taste.
Gradually whisk in the non-dairy milk and vegetable broth until the mixture is smooth and thickened.
